RECIPE: Peanut Butter Protein Balls

IMG_1979Anyone who knows me will get this – I have a sweet tooth. I can be training hard in the gym and doing 3 back to back classes, I can be eating healthy meals three times a day and drinking my 3L of water BUT I have one lapse.  I really struggle with sweet things – chocolate, lollies, ice-cream, donuts… Anything with sugar really. Like the documentaries and books say it’s just as addictive as the white stuff and it’s a huge part of my life I am trying to fix.

One thing that I have learnt since meeting some amazing trainers at the gym is not to deprive that sweet craving if it is something I enjoy but just make sure they are healthy. If I deprive myself I last a few days then lose it and probably consume the same about in one hit! I am still learning how to make clean eating habits and have days where I would opt for a Cadbury bar over a protein bar any day but one thing that really helps is protein/raw goodness. I love protein balls, bars or shakes (and luckily there is a huge trend around it at the moment so they are readily available). I understand too much might not be too good for you but they do the trick (most of the time) and tie me over until dinner.

These ones are quite rich – so ladies, if you are having one of those days where you need chocolate anything they are great.

WHAT YOU WILL NEED (to make a batch to last a week for 2 people or more):

2 cups old-fashioned rolled oats
1 cup organic extra-crunchy peanut butter (make the raw kind from Whole Foods if possible)
1/2 cup raw honey (Makuna if you can but I know it’s $$!)
1/2 cup dark chocolate chunks
1/2 cup Vita Coco Coconut Oil (this one tastes the best)
1/2 cup sunflower seeds
2 tablespoons flax seed
2 tablespoons of pumpkin seeds
Got any other nuts or seeds in the house? Throw them in too!

There is no method – these are easy.  mix it all together in a bowl and roll into balls. Place in fridge for 1 hour then they are ready to go. Keep them in the fridge until you are ready to pop one in your bag and head out for the day.

Try them and share your pictures on Insta! xx
